Though grown in many European and Central Asian countries, the saffron grown in the area around Kozani in Western Macedonia is acknowledged as the best quality organic Saffron in the world.

Crocus’ are planted each summer and the stigmas of the flowers are removed by hand and dried thoroughly each autumn. The harvesting happens in the early morning when the petals are closed and generally takes around a month. The stigmas weigh virtually nothing; it takes 50,000 to produce 100 grams of red saffron.

Its rarity and cost comes from a combination of the intensive nature of the harvesting and the size of the annual production, which varies between just 6 and 12 tons depending on the weather. Greek saffron is considered a luxury foodstuff that is in great demand and can cost many thousands of euros per kilo.
